Black Bean Salad with Avocado Dressing

This morning I worked out at the gym (yay! back to lifting weights and loving it so far! fingers crossed the motivation keeps up). While I was at the gym I got very hungry. This always happens.... ugh ;) so while I was working out and dreaming about lunch (because that's what I do when I work out) I "googled" healthy salads and the below recipe popped up first. This was fine by me because it looked aaaaamazing and I wanted to try a making a new salad dressing! This black bean salad with avocado dressing from Pop Sugar was amazing and we will definitely be making it again. John who likes greens but doesn't love them even loved this one! Yay thumbs up to pop sugar!

INGREDIENTS

  1. For the avocado-cilantro dressing:
  2. 1 avocado
  3. 1 garlic clove
  4. 1/4 cup cilantro
  5. 1/4 cup Greek yogurt
  6. 1 tablespoon freshly squeezed lime juice
  7. 4 tablespoons olive oil
  8. 1 teaspoon salt
  9. 1/2 teaspoon freshly ground black pepper
  10. 1 teaspoon apple cider vinegar (optional) we added it and it and the dressing tastes amazing!
  11. Water
  1. For the chopped salad:
  2. 3 cups romaine lettuce, chopped
  3. 1 medium tomato, chopped
  4. 1/2 bell pepper, chopped
  5. 1/2 cucumber, chopped
  6. 1/2 cup canned black beans, drained and rinsed
  7. 1/2 cup canned corn, drained and rinsed
  8. 1/2 teaspoon chili powder
  9. 1/2 teaspoon ground cumin
  10. Salt and pepper to taste

DIRECTIONS

  1. Using a food processor, mix the avocado, garlic, cilantro, yogurt, lime juice, olive oil, salt, pepper, and vinegar. Add water to thin out the dressing as desired. Set aside.
  2. Make sure the lettuce, tomato, bell pepper, and cucumber are all finely chopped. Rinse and drain canned black beans and canned corn. Add all salad ingredients, chili powder, and cumin to a large bowl and toss with the desired amount of avocado-cilantro dressing.
  3. Add salt and pepper to taste. Serve immediately.
